Creamy & spicy West African vegetable peanut stew that makes you crave for another serving!

INGREDIENTS FOR VEGETABLE MIX
 3 Medium sized Potatoes
 1 Large Red Bell Pepper
 1 cup Chopped Carrots (Chunky)
 1 cup Cubed Zucchini
 1 Medium Onion Chopped in half inch chunks
 1 cup Sliced Mushrooms
 1 Jalapeño chopped without any seeds
 2 tbsp Minced Garlic
 1 tbsp Grated Ginger
 1 tbsp Cayenne Pepper Powder
 1 tbsp Black Pepper
 1 tsp Turmeric Powder
 2 tbsp Olive Oil
 1 tbsp Sea Salt
INGRDIENTS FOR THE STEW POT
 1 14 oz Can of Diced Tomatoes
 1 14 oz Can of Chick Peas
 2 cups Vegetable Stock or Water
 ¼ cup Harrisa
 1 cup Coconut Milk
 ½ cup Peanut Butter ( Skippy Natural - Creamy or any others with low sugar )
 1 tbsp Sea Salt
 2 tbsp Olive Oil
DIRECTIONS

Mix all the ingredients for the vegetable mix in a large bowl, and let it sit about 10 minutes.

In a preheated large wok or pot, add 2 tbsp of olive oil and pour in the vegetable mix and stir until onions get translucent(about 5 minutes).

Now, pour in all the ingredients for the pot except the peanut butter. And mix well and stir occasionally at medium heat for 25 minutes.

Add peanut butter, mix well. Cook it for another 5 minutes.
Serve it with rice and cilantro as a garnish.
