 1 Onion (양파)
 45 Scallion (대파 )
 2 oz Ginger (생강)
 1 Apple (사과)
 3 Spicy Hot Pepper (청양고추)
 1 Pork Shoulder with Bone in (족발-앞다리)
 20 Whole Black Pepper (통후추)
 5 Bay Leaves (월계수 잎)
 5 Star Anise 정향
 2 tsp Cinnamon Powder (계피분말 )
 8 Garlic (마늘)
 1 cup Soy Sauce (간장)
 ½ cup Dark Soy Sauce (중화요리용 간장 / 진간장)
 1 cup Sugar (설탕)
 ½ cup Mirin (미림)
 ½ cup Rice Wine (정종)
 ½ cup Dried Date (대추)
 1 gal Water (물)
DIRECTIONS

Boil in a big pot for 30 minutes

Drain out all the water and wash the pork shoulder. And put it aside.

Add all ingredients and water to a big pot

Simmer it for 15 minutes and reduce the heat to medium-low, and boil it for another 1 hour and 45 minutes.

Drain out all the liquid to another pot which can be used as a dipping sauce later. Bring out the jokbal and let it cool for 1 hour in a refrigerator.

When jokbal has been cooled down, then debone the jokbal. And slice your jokbal to your liking and serve with some hot pepper and sliced garlic on the side with lettuce.
